  • ½ lb pork loin cut into ¼-1/2 inch thickness
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • 2 TBLS TwoGirlsGourmet Shallot Oil
  • 2 TBLS Olive Oil
  • ½ lemon
  • Salt & pepper
  1. Place a pirk cutlet between two sheets of plastic wrap
  2. Pound the pork cutlets to approximately ⅛th of an inch thickness
  3. Salt and pepper to taste
  4. Place the egg and the panko in shallow bowls
  5. Heat the oils in a 12 inch nonstick skillet
  6. Dip the pork in the egg , making sure it's entirely coated
  7. Cover with panko, making sure it is fully coated
  8. Place cutlet in pan
  9. Cook until each side is golden (approximately 2 mins per side)
  10. Squeeze lemon over the top
  11. Enjoy!
