Sunday Lemon Roasted Chicken

Serves: 4 servings
  • 1 chicken approximately 4lbs
  • 4-5 potatoes peeled and sliced ¼ " thick
  • 3-4 garlic cloves minced
  • 11/2 TBLS Herb d' Provence or thyme
  • 3 TBLS TwoGirlsGourmet Shallot Oil
  • 1 lemon
  • 1 shallot or ½ onion
  1. Preheat oven to 400
  2. In a large bowl add the Shallot Oil, potatoes, herb d' Provence, garlic, salt and pepper
  3. Mix together and place in a sheet pan, leaving room for the chicken
  4. Pat the chicken dry
  5. Sprinkle salt and pepper inside and outside of the bird
  6. Place the chicken in the center of the pan
  7. Scrape out the remaining oil & garlic mixture onto the chicken
  8. Squeeze 1 lemon over the potatoes and chicken
  9. Stuff the chicken with the lemon halves and a shallot
  10. Truss the chicken legs
  11. Place in the oven for approximately 1 hour 15 mins or until the thermometer reaches 165
  12. Let the chicken rest for 15 mins
